In recent 30 years, FBFS lab has been paying more attention on the researches—— application of beneficial microorganisms in food processes, control of harmful food microorganisms and the relative molecular fundamentals of environmental factors to regulate microbial growth, development and secondary metabolite production. Three research aspects have been established, including food fermentation,food safety and molecular biology of food microorganisms.
